Modak Kheer

step 1

Prepare the dough : To begin with this easy recipe you need to make the dough first. Take a pan and add 2 cups of water for one cup of rice flour along with a dash of salt and ghee. Add in the rice flour gradually and keep stirring so that the dough has no lumps. Cook this mixture till it attains a dough-like consistency.

Make small dough balls : Next, add 1 tablespoons of powdered sugar along with a dash of cardamom powder to the dough and add some boiled water and make a smooth sweet dough. Once the dough attains a normal temperature, grease your palms and make small dough balls.

Steam the dough balls : Once the small dough balls are prepared, take a steamer and steam the dough balls for 5-8 minutes. You can also use a pressure cooker to steam, just place the dough balls in a vessel, cover it nicely and place the vessel between water and cook it for 5-7 minutes. Keep aside.

Prepare the kheer and add the dough balls : In the meantime, take a deep bottomed vessel and add milk, keep stirring the milk and once the milk turns slightly thick, reduce the flame and add in sugar, saffron strands, cardamom powder, fresh cream, stir it nicely, then add the dough balls cover the lid and let it simmer. Once the dough balls appear soft and the kheer turns nice and creamy. Transfer to a serving bowl and garnish with crushed pistachios and serve the way you like.
